Answer:
There are two functions of the Preserve/Jam function on a Convection Steam Oven (CSO).
- One is to prepare jam jars and the other is to preserve jam.

This information is for older CSO models with a knob. For Legacy CSO models with touch controls, refer to Legacy Convection Steam Oven (Touch Control) Sanitize Mode.
To prepare jam jars:
- Push in center OK button.
- Turn dial to CLEANSE.
- Press OK.
- Turn dial to PREPARE JAM JARS or PRESERVE JAM.
- Press OK.
- Put the jars, lids, and rings in the unit and use the Preserve/Jam function.
- This replaces the two-step process of boiling jars, lids, and rings.
- Press START.
- Once the jars are ready, prepare a jam recipe; pour the boiling jam into the jam jars from the steam oven.
To preserve jam:
- Put the lids and rings on and place them back inside the Convection Steam Oven.
- Push in center OK button.
- Turn dial to CLEANSE.
- Press OK.
- Turn dial to PREPARE JAM JARS or PRESERVE JAM.
- Press OK.
- Put the jars, lids, and rings in the unit and use the Preserve/Jam function.
- This replaces the use of a large pot of boiling water to submerge jam jars.
- Press START.
