Turkey Chipotle Chili

2 pounds ground turkey1 small onion, diced
1 small green bell pepper, diced
1 small red bell pepper, diced
1/2 tablespoon minced garlic
3/4 cup red wine
6 cups tomato sauce
2 cups chicken stock
4 cups canned black beans, drained and rinsed well
2 cups white hominy
1 1/2 tablespoons minced chipotle in adobo
1 teaspoon ancho chili powder
1 teaspoon chipotle Tabasco
2 teaspoons cumin
2 teaspoons dried oregano
1 tablespoon cocoa powder
2 tablespoon creamy peanut butter
Preparation Method
- Brown turkey and the onions together over medium heat in a large stock pot.
- When onions are soft add the peppers and garlic.
- Continue to cook 4-5 minutes until turkey is browned.
- Deglaze with the wine and add the rest of the ingredients except the hominy.
- Bring to a simmer and cover.
- Stir occasionally and cook 20-30 minutes.
- Uncover and add hominy.
- Cook for an additional 10-15 minutes, stirring occasionally.
