BEFORE YOU START: Cut off ends of quail wings; cut quail in half lengthwise. Mix all ingredients in plastic bag. Marinate in Sub-Zero refrigerator for at least 30 minutes, but no longer than one day.

Preparation Method

  1. Preheat Wolf outdoor grill or charbroiler on HIGH for 10 minutes with hood closed.
  2. Position Wolf electric oven rack to position 3. At same time preheat oven in CONVECTION at 400°F.
  3. Remove quail from marinade and grill for 2 to 3 minutes on each side.
  4. Place quail on parchment-lined baking sheet.
  5. Place in oven 10 to 15 minutes or until the meat reaches an internal temperature of 165°F.
