1 1/2 pounds fresh green beans, trimmed

1/4 cup unsalted butter

1 teaspoon freshly grated nutmeg

Salt and freshly ground black pepper

1 1/2 cups thinly sliced almonds

Preparation Method

  1. In large stockpot over high heat on Wolf gas cooktop, bring 6 quarts salted water to a full boil.
  2. Add beans to the water and boil for 2 to 3 minutes. Do not over cook. Immediately drain and chill in ice water. Drain well. Set aside.
  3. About 10 minutes before serving, heat 12-inch sauté pan over high heat on Wolf cooktop.
  4. Add butter. Melt butter until it becomes brown.
  5. Add nutmeg, salt, pepper, and almonds to the pan. Allow the almonds to brown.
  6. Add green beans and turn frequently with tongs until the beans are heated through. Adjust seasoning if desired and serve immediately.
