Easy-Peel Tomatoes
Often, to achieve the right texture for certain soups or sauces, you’ll need tomatoes without skins. Here’s a simple way to peel fresh, ripe tomatoes.

Preparation Method
- Remove stems.
- On the base of each tomato—opposite the stem—cut a small “X.”
- Place tomatoes on perforated pan and slide into oven at rack position “2.” Slide solid pan into rack position “1.”
- Set oven to 210°F Steam Mode. Steam tomatoes for 1½ minutes. If slightly underripe, add an additional 30 seconds to 1 minute.
- Remove pan from oven and immediately plunge tomatoes into ice bath; let cool for several minutes.
- Remove from ice bath and peel each tomato from the bottom; the “X” will have expanded during steaming.
