Preparation Method

  1. Remove stems. 
  2. On the base of each tomato—opposite the stem—cut a small “X.” 
  3. Place tomatoes on perforated pan and slide into oven at rack position “2.” Slide solid pan into rack position “1.” 
  4. Set oven to 210°F Steam Mode. Steam tomatoes for 1½ minutes. If slightly underripe, add an additional 30 seconds to 1 minute. 
  5. Remove pan from oven and immediately plunge tomatoes into ice bath; let cool for several minutes.
  6. Remove from ice bath and peel each tomato from the bottom; the “X” will have expanded during steaming.
