1/4 cup sliced shallots

1/4 cup pickled ginger, coarsely chopped

1/2 teaspoon sugar

Freshly ground black pepper

Large pinch kosher salt

1/2 cup butter

Preparation Method

  1. In medium sauté pan over medium high heat on Wolf gas range, add all ingredients except butter. Bring to a rolling boil.
  2. Boil for about 20 minutes to reduce the liquid to about ¼cup.
  3. Reduce heat to simmer and whisk in butter until completely melted.
  4. Serve with Salmon Cakes.
